What wonderful weather! The hedgerows are full of elderflowers so this weekend I have been making elderflower cordial! It's so easy to do and well worth the effort! What's nicer than a refreshing glass of elderflower cordial to sip in the garden! Just soak the eldeflowers and slicedoranges and lemons in sugar syrup for 24- 48 hours. Strain through mslin to remove bits and dissolve in a couple of teaspoons of cirtic acid to extend the shelf life. I use a recipe from River Cottage. Now to find some cocktail recipes for those lazy summer evenings!!!
